Watermelon Lime Popsicles

A couple of weeks ago DC was hotter than usual and I was seriously craving some of the amazingly refreshing frozen watermelon treats that I basically lived off  of during my 3 weeks in Bali. The other day one of my friends, Katie, and I decided to get together for a long overdue catch up session. We gave these Watermelon Lime Popsicles a shot, but with our own little twist! They’re not only delicious but also super healthy! My sweet tooth has been out of control lately so it’s nice to have a healthy option that will also cool me off this summer!

They were so good and crazy refreshing after a long afternoon of chatting and outfit shoots in the 95 degree DC heat. Oh the joys of August in the District…

Watermelon Lime Popsicles

Watermelon Lime Popsicles

Prep time: 10 minutes
Freeze time: 5-6 hours

Ingredients:

1/2 cup water (or coconut water)
1/3 cup lime juice
3 tablespoons agave
4 cups cubed seedless watermelon

Directions:

First mix the water, lime juice and agave together and set aside. Then add the watermelon to a blender and start to blend. Slowly add the liquid to your watermelon. Pour into popsicle molds, freeze and voila! The easiest and most refreshing popsicles you’ll ever eat!

We’re thinking it would be really easy to modify this recipe and make watermelon margarita popsicles… Stay tuned because that’s definitely happening before the summer is over.

I think watermelon and lime are a great flavor combination to begin with, and these watermelon lime popsicles are such a good way to cool off this summer. What’s your favorite summer treat?
