I love smoothies, I drink at least one every day for breakfast and usually end up having one for lunch too! They’re super quick, easy, delicious and a great way to pack a whole lot of nutrients into one meal or snack!
It is fall and while everyone is running to Starbucks to get their pumpkin spice lattes, I’ve been looking for some alternative and healthier ways to incorporate my favorite fall flavor into my day to day! Don’t get me wrong, I definitely already got my seasonal PSL from Starbucks. But $4+ for a cup of coffee is a bit much for me so I will probably only have one or 2 this season, gone are the days when my unlimited meal plan paid for my Starbucks addiction! The Pumpkin Spice Smoothie is definitely becoming one of my favorite smoothies and will definitely be making an appearance on a fairly regular basis in my kitchen this fall!
Pumpkins are full of antioxidants, vitamin A, and fiber and they definitely help keep you fuller longer so having this smoothie in the morning serves as a great, low calorie breakfast!
Pumpkin Spice Smoothie:
1 cup of pumpkin puree you can make your own or pick up a can like I did (don’t get pumpkin pie filling! it will be so sweet!)
1 frozen banana
1 cup almond milk or coconut milk, whichever you prefer, I used vanilla almond milk.
2 tablespoons of vanilla protein powder (completely optional!)
1/2-1 teaspoon cinnamon
1/2-1 teaspoon nutmeg
1 teaspoon vanilla extract
2 teaspoons brown sugar or maple syrup
Toss everything but the milk and spices in your blender then add half the milk and half of the spices.
Blend and add the rest of the milk until you reach your desired thickness, taste it and see if you want to add more spices, I tasted and added until it had enough spice to pumpkin ratio for me!
When serving I filled half my glass up then added a thin layer of crushed graham crackers before filling the rest of the glass! It was like drinking a liquid pumpkin pie which is my favorite of all the fall desserts so I loved it! You could also add a small dollop of whip cream on top-or maybe vanilla yogurt for a healthier alternative-if you wanted to!
